I have a similar case... (top and bottom plate) with a Pimoroni NVMe BASE under the Pi, the active cooler on top, and then a spaced up DAC board on top of that, then the top plate. No issues with temperatures and the fan does not run much. Pi lives in an office environment with AC, that rarely goes over 24C.I'll try that and repost the errors.
I could probably give more space. But i've had many setups since getting this and the issue persists through them all. I started with the bare heatsink that came with it. Then I upgraded to the standard black case with the top fan (only made things worse) then I took it out of the case and purchased a very large fan and heatsink and that mostly worked alright but would still lock up at 60ish c. I then purchased the HAT, NVME, and the active cooling fan.
Throughout all these setups tho, the end result was the same. 60ish c and a lockup occurred.
Issues around 60C do not make sense and point to a potentially bad board or broken temperature sensing.
